We have personally visited our table olive growers, a combination of NSW and Victorian based farms.

Olives are brined in the traditional method, using sea salt, water and vinegar over several months, until the olives are ready for eating.

Specifically salt and vinegar reduced, improving their flavour and bringing through the real flavour of olives.
