From the very beginnings of its usage within ancient civilisations such as the Minoans, Romans and Greeks, olives were highly considered in terms of their health benefits and the olive tree itself was thought to be sacred, a gift from god (or the gods, depending on the culture!). Vitamins can be lost in a fruit as the olive matures and ripens and so harvesting slightly unripe olives allows for more time in processing. The bitterness of natural, raw olives from the tree is taken care of during this processing practice and preservation in salt brine allows for the olives to maintain their freshness.
